Live Below the Line 2014 - Day One

So I've decided to take part in Live Below the Line 2014, which will see me living on a £1 a day for the next 5 days, in order to raise money for The Hunger Project UK. When I first signed up I was slightly naive and shrugged it off, thinking it wasn't going to be a challenge at all. I don't spend a large amount on food anyway, what harm was scrimping a little more than usual going to do? However as the challenge grew closer it started to dawn on me that it was going to be a little trickier than I had apprehended. As a lover of food full of flavour and spice I realised that the blandness of the food was going to be my main problem, furthermore the repetitiveness of meals was going to drive me crazy. Last night I spent close to an hour searching the shelves of Tesco's for the best bargains and I must say the offerings for just £5 were bleak. But here I am on day one of the challenge, I'll keep you all informed on just how hard/boring these next few days are going to be. Breakfast - Porridge with water

To be honest this first breakfast wasn't too bad, I usually have porridge for breakfast however I really missed adding banana or peanut butter for some flavour!



Lunch - Poached egg roll with baked beans

Lunch was actually quite tasty, I haven't had a poached egg in ages and it was really good, also I dipped my roll in the beans so it wasn't too dry. The only thing I missed here was pepper for the eggs. However I'm starting to worry I shouldn't of eaten the beans on the first day as they were probably the item I bought with the most flavour.


Dinner - Vegetable & Potato Soup with Roll

The one good thing about completely my challenge whilst I'm at home for the Easter holidays (where there is free food everywhere!) is my dad's vegetable patch. For dinner my plan was to cook up a big batch of soup, with just potatoes and frozen veg to play with. However I was over the moon when Dad said he had a vast array of leeks in the garden and a booming herb patch! (Home grown vegetables are allowed, I checked). My soup ended up being really tasty, however I do have 4 servings of it left to eat across the next few days and I'm sure the initial enjoyment will quickly wear thin!
