Grilled Chicken with a Spinach & Feta Cheese Sauce

Last night was the Journalism Societies spring ball, and after enjoying myself a little too much I was definitely feeling the effects of all the free champagne today, so was craving something comforting for dinner. The meal at The Cardiff National Museum was gorgeous, I was really surprised as food at these kind of things is normally pretty bland and boring, however this led to me polishing off all three courses (and finishing a friends sticky toffee pudding) leaving me with the age old hungover dilemma, wanting to detox after the night before but only craving everything unhealthy. So I got my thinking cap on and wiped up this creative little dish, grilled herby chicken with a spinach and half-fat feta cheese sauce, all the comforting cheesey goodness without the guilt, what more could you want? Also this recipe is super easy and definitely hangover proof!

Ingredients:

  • 1 chicken breast
  • 1 tablespoon of mixed herbs
  • 50g half-fat feta cheese
  • 1 big handful of spinach
  • 50ml skimmed milk
  • 1 teaspoon of corn flour

Method: 

Smother your chicken breast with the mixed herbs and grill on a baking tray for about 10-15 minutes until the chicken has cooked through.
Whilst your chicken is cooking crumble the feta into a pan with the milk and heat gently until it starts to simmer, roughly chop the spinach and add it to the pan once the feta has melted. 
When the spinach starts to wilt, pop in the corn flour and stir continuously with a wooden spoon. Quite quickly the sauce should start to thicken, when it does remove it from the heat so it doesn't get too thick. 
Remove the chicken from the grill and drizzle the sauce on top. I served it with rice and frozen veg but you could have it with pasta instead. Easy as that, and it was definitely the comforting dinner I had been craving!
